Velkommen til denne lokation, som ligger i byen berømt for sin fantastiske arkitektur, rige historie og blomstrende kulinariske og designscene. Vores ombyggende fabriksbygning og destilleri har en udendørs terrasse og cocktailbar, kun 10 minutters cykeltur fra byens centrum. Slap af og nyd en drink, mens du fordyber dig i den livlige atmosfære eller lærer om vores håndværksbrændevin. Vores samfund er passioneret omkring bæredygtighed og innovation, og vi kan ikke vente med at dele fortryllelsen af denne unikke by med dig.

Cocktails og spiritus i verdensklasse

Vores økologiske destilleri ligger ved Kløvermarken, lige ved siden af Christiania og 5 minutter på cykel fra Refshaleøen urbane omgivelser. Snup en cocktail på vores dejlige terrasse, inden i tager på Reffen for at spise, eller besøg os til en af vores oplevelser og smagninger. Vores døre er åbne for walk-ins indenfor barens åbningstider, hvor vores bartendere står klar til at fortælle dig om og byde på vores udvalg af økologiske, håndlavede spiritus. Du kan selvfølgelig altid komme forbi og købe en flaske eller to i både shoppens og barens åbningstider.

THE ENVIRONMENT IS WHERE WE LIVE

Copenhagen Distillery is the first whisky distillery in the history of Copenhagen. We were established in 2014 launching our first product (a single botanical gin) mid. 2015. We now produce whisky, gin, aquavit, and a wide range of limited editions.

 DESIRE TO DISCOVER

Our mission is simple, we want to change the world of spirits by challenging its conventions while respecting its traditions. Strong words, but they shape everything we do.

We have a strong belief in the beauty of simplicity and balance. It’s through design, experimentation and radical thinking that we propel ourselves into new and uncharted territories. If it doesn’t surprise and delight, it doesn’t go into the bottle. 

All of our products are truly artisan. From grinding the grist, fermenting the grain into alcohol, the distillation, maturation, and bottling process – everything is handmade. 

GOING ORGANIC

Copenhagen Distillery achieved – as one of the first micro-distilleries in Europe – the organic certification in January 2019.

Going organic was a big but natural step to take. We believe the care the farmers take to make organic products, can be tasted directly in the final product. The use of pesticides and insecticides is a major danger to our environment and communities, and we have a responsibility to limit our impact. 

SUSTAINABLE QUALITY

Alongside this, in all aspects of our production, we operate with sustainability as a critical principle:

  • The electricity we use is all windmill generated, and all electric consumption is, in general, held at an absolute minimum.
  • In 2018 we began, as one of the first distilleries in Scandinavia, to distribute our white spirits in an eco-friendly Bag-in-Box system. 
  • The grist from the whisky is repurposed for animal fodder, and we have projects with partners to upcycle it to bread, “chocolate” and breakfast cereal, stay tuned. 
  • The stoppers for the bottles are made from recycled cork. 
  • 75 % of the cooling water used in production is circulated in a closed system. Only the water used for cleaning is flushed. 
  • Heat from production is used for re-heating the surrounding parts of the distillery
  • Consumption of plastic and other artificial substances are held at a minimum.
  • All waste is sorted and recycled in accordance with communal guidelines.

 THE COCKTAIL BAR

The cocktail bar at Copenhagen Distillery is an intimate space where you can sit quietly for a drink or two, experience our spirits through tastings and classes, or join up to 500 other people for live performances on stage.

The menu in the bar is made by upcycling elements from the spirit production. As far as possible anything bought is organic and locally produced, but mostly the menu is made from ingredients like homemade vermouth, bitters and cordials to ensure minimal environmental footprint. 

For every cocktail, beer or glass of wine sold, we donate part of the profit to EATCO2. They spend it planting trees in Africa through community projects, effectively making a gin and tonic climate positive. The wages paid to the workers, the communities built, and the schools being opened is a heartwarming side effect. 

SOCIAL RESPONSIBILITY

We have a strong focus on making our workspace versatile and open-minded. It is natural for us to embrace our colleagues who are either suffering from the aftereffects of a stroke or struggling with a diagnosis such as ADHD, Asperger’s syndrome or autism. With a little help and understanding from the colleagues it is often amazing how much can be achieved despite being in a vulnerable situation. 

In short, we see diversity as a strength and an opportunity to do things differently. 

IN CONCLUSION

We live in the environment. It is not an option to take care of it. Small as we are, we are adamant that we, through diligence and ardour, can do our part to save the world.
